USA, FL: Proof Brewing Company to open its second location in Tallahassee

The footprint of Tallahassee's largest craft brewing company is about to get bigger, the Tallahassee Democrat reported on December 15.

Proof Brewing Company inked a deal with Florida State University and Seminole Dining to open its second capital city location. The new venture, Proof at FSU, will be housed on the ground floor of the university's new student union and serve classic pub fare.

It's slated to open in early 2023. The 5,000 square-foot space will be adjacent to the union's 12-lane bowling alley. It will serve up to 150 customers and operate seven days a week for lunch, dinner and weekend brunch hours.

Proof at FSU will serve eight draft lines, including rotating, specialty and sour variations. The full-service bar also will serve craft cocktails, boutique wine, mocktails and non-alcoholic drinks.

Founded by Byron & Angela Burroughs in 2012, Proof Brewing Company operates its flagship location on 1320 S. Monroe St. Byron Burroughs called the expansion a "fantastic opportunity for us as a brand and as a local business to be able to partner with Seminole Dining."

"We were approached by Seminole Dining, who wanted to have a local partner to come in and run the operation, and we were very excited for the opportunity and to be able to take it," he said.
