Descrizione
Un’ Ale forte ad alta fermentazione, con contenuto di alcool di al meno di 8% e fino a 12% (o più). Si chiama un vino d’orzo perché può essere forte come il vino, ma dal momento che è fatto di grano anziché frutta, è, infatti, una birra. Servite questa birra in un bicchiere speciale, che concentrerà l’aroma. E’ ottima con il dessert.

Safbrew S-33 80 g / hl
Temperatura di miscelazione
Fase 1: Miscelazione
-Aggiungere 32.5 kg di malto in 75 litri di acqua a 63oC
-Mescolate 80 minuti a 63oC
-Aumentare la temperatura fino a78oC
-Lasciare a riposo per 2 minuti
Fase 2: Filtrazione
-Separare il mosto delle trebbe e lavari il tino con acqua a 78°
Fase 3: Bollitura
Durata: 1 ora 40 minuti;
Il volume diminuisce di 8 - 10%
-Dopo 15 minuti aggiungere il luppolo amaro;
-Dopo 95 minuti – il luppolo aromatico;
Il mosto deve avere una densità di 24° Plato. Si lascia in fase di ebollizione.
Per ottenere la densità necessaria, aggiungere lo zucchero.
Fase 4: Whirlpool Dopo la bollitura il mosto viene trasferito nel whirlpool per 5 minuti, lasciate durante 25 minuti.
Fase 5: Raffreddamento
Raffreddare a 23 oC
Fase 6: Fermentazione
Aggiungere il lievito secco nel mosto colorato a 23oC
