Brewing news USA, TN: Mad Knight Brewing Co. now open in St. Elmo

St. Elmo has a new neighborhood taproom and brewery, Nooga.com reported on May 19.

"We are St. Elmo people," Mad Knight Brewing Co. co-owner Connor Choate said. "We want to have a great name in Chattanooga and a positive outreach throughout, but we are focused on our neighborhood. We want to be a neighborhood brewery."

Mad Knight opened recently in the basement of a former K-Ration packaging facility at 4015 Tennessee Ave.

Choate started homebrewing before he was old enough to legally drink, and after growing up in Chattanooga, he moved back here last December to open the business.

He's worked a full-time construction job to support his family and help fund the business, he said.

"This is truly a labor of love," said Choate, who has been brewing beer for more than four years. "There are some great beers being made in Chattanooga, and we're excited to join the ranks with our own offerings."

The brewery's flagship beers are the Big Boss Man, a fruit-forward pale ale, and the Crazy Otto, a saison.

The business will also feature several other taps serving four rotating seasonal beers.

The products have an average alcohol by volume of about 5 percent per beer.

"Our beers are different; they are complex and interesting, but at the same time, they are approachable," Choate said.

Mad Knight also plans to release "mixed culture" beers with a heavy emphasis on barrel aging and blending, led by Mad Knight brewer Murray Sharp.

"Mixed culture beers take time, but they're our passion, and we can't wait to introduce a lot of people in Chattanooga to such a wonderful way of making beer," Choate also said.

The new business doesn't serve food, but patrons can bring in food or order it for delivery from nearby restaurant Mr. T's Pizza & Ice Cream, Choate said.

Food trucks also often park outside the brewery.

Business hours are Friday from 4:30 to 10 p.m., Saturday from 1 to 10 p.m. and Sunday from 3 to 8 p.m.
