Château Cara Clair 2% / 0.6 kg

Magnum (12.0% aa) 25.8 IBU / 80 g
Hallertauer Hersbrucker (3.5% aa) 2.2 IBU / 100 g

ETAPA 1: MOSTURA
Siga o perfil abaixo:

Repouse por 60min à 63°C
Eleve para 67°C à 1°C/min
Repouse por 15min à 67°C
Eleve para 72°C à 1°C/min
Repouse por 10min à 72°C e então faça o Teste de Iodo
Eleve para 78°C à 1°C/min
Repouse por 2min à 78°C para mash out

Uma vez que a mostura acabou, filtre e lave com água à 78°C
ETAPA 2: FERVURA
Ferva por 90min.
Adição de lúpulo 1: Após 30min adicione Magnum.
Adição de lúpulo 2: Após 80min adicione H Hersbrucker.

ETAPA 3: FERMENTAÇÃO e MATURAÇÃO Resfrie o mosto ate 18°C e inocule o fermento. Fermente à 18°C por 2 dias e entao eleve para 22°C. Uma vez que a fermentação acabou (FG atingida e off flavours removidos – por volta de 7 dias), bixe a temperatura para 8°C e repouse por 1 dia e remova o fermento. Baixe a temperatura para 2°C e repouse por 10 dias.

ETAPA 4: CONDICIONAMENTO e ENVASE Condicione a cerveja à -1°C por 5 dias, remova o fermento residual e carbonate até 2.8 volumes de CO2. A cerveja esta pronta para envase e consumo. Aprecie! *Para refermentação na garrafa, adicione açúcar e SafAle F-2.
