Description
Sweet amber beer, with juniper, herbal, floral, spicy aromas. A little dry and thirst quenching. Sahti is a traditional beer from Finland made from a variety of grains, malted and unmalted, including barley, rye, and/or oats. Traditionally the beer is flavored with juniper branches in addition to, or instead of hops.

INGREDIENTS /100 litres
MALT

Château Pilsen 2RS 17 kg
Château Rye Malt 4 kg
Château Peated 1 kg
Château Cara Blond® 1 kg
HOPS

Brewers Gold 110 g
YEAST

SafAle S-33 50-80 g
SPICES

Juniper Berries 25 g
Mashing temperature
Step1: Mashing
-Mash in 70 litres of water at 67°C, then increase gradually the temperature up to 63°C
-Rest at 63°C for 1 hour
-Rest at 72°C for 15 minutes
-Rest at 78°C for 2 minutes



Step 2: Filtration
-Separate the wort from the spent grain by water at 75°C
Step 3: Boiling
Duration: 80 minutes
-In 5 minutes add hop Brewers Gold
-In 70 minutes add Juniper Berries
The volume of wort declines by 8 - 10%

Step 4: Fermentation
Ferment at 23°C with the recommended yeast as above
Step 5: Lagering:
Step 5: Lagering: Mature during 2 weeks at 3°C
